„I sampled these coffees in three stages: first as a single, straight shot (1.25-ounces including crema, 17-20 seconds after the first drop), next as a single shot mixed with one part hot (not frothed) milk, and finally as a single shot mixed with three parts hot milk. North American caffé lattes may add as much as six or eight parts milk to coffee, but at that extreme level of dilution I find it difficult to determine anything at all about the coffee itself. Readers who take their espresso in very large quantities of milk should find the coffees I identify as effective in "big milk" good candidates for home brewing regardless of the exact proportions of milk to coffee in their final drinks.“

„The Barista comes with one of those spring loaded nightmare portafilters, guaranteed to spit out something that looks just like crema, no matter how crappy your beans are, how badly they’re ground etc. The first indication that this stuff isn’t crema is the fact that it disappears faster than the head on a warm Diet Coke. The second indication is, of course, the oh so bitter flavor of the beverage. This is in spite of ultra fresh beans (three days old) and a good vigorous tamp.“

„There are many machines on the market today with "crema enhancing devices". These produce what I consider false crema, the type that dissipates rapidly and barely hangs to the side of your cup. I am also more and more convinced that they degrade the espresso beverage taste. I base this on my increasing experimentation and testing of espresso machines with crema enhancers in place.“
