„The first successful extraction of caffeine from coffee beans was achieved by a German chemist, Runge, in 1820. His friend, the poet Goethe, had suggested that Runge analyse the constituents of coffee to discover the cause of his insomnia - and the history of decaffeinated coffee began. However, the real technical breakthrough did not come until the turn of the century, when Ludwig Roselius decided to pre-treat the coffee beans with steam before bringing them into contact with the caffeine-removing solvent. Steaming swells the beans, increasing their surface area and making the caffeine easier to remove.“

„Until a method is developed which will completely eliminate caffeine while preserving other flavor constituents of coffee, we will have to tolerate these imperfect methods. The best thing to do is to try several different brands of decaffeinated coffee until you settle on the one or two that taste the best and feel as though they have the least amount of caffeine.“

„Notes: All of the constituents of this blend are certified Fair Trade, meaning small-holding farmers have been paid a "fair" or economically sustainable price for these coffees. If coffee traces its origins to Ethiopia, dark roasting in the United States traces its origins to Peet's. By manipulating temperature and airflow (what Peet's roast master John Weaver calls "the Peet"s 'special sauce'"), Peet's achieves its trade-marked "deep roast" and a pungent, cling-to-your-palate roasted flavor like almost no other. Visit www.peets.com or call 800-999-2132 for more information.“
