„His friend, the poet Goethe, had suggested that Runge analyse the constituents of coffee to discover the cause of his insomnia - and the history of decaffeinated coffee began. However, the real technical breakthrough did not come until the turn of the century, when Ludwig Roselius decided to pre-treat the coffee beans with steam before bringing them into contact with the caffeine-removing solvent. Steaming swells the beans, increasing their surface area and making the caffeine easier to remove. Roselius' discovery made it possible to produce decaffeinated coffee on a commercial scale for the first time; he founded Kaffee HAG in Bremen in 1906.“

This means the typical decaf drinker really loves the taste of coffee and wants to keep enjoying it past the point of not wanting any more caffeine. In addition, these dual users, on average, drink more coffee than those who just drink regular or decaf alone, making them very desirable coffee customers indeed. Obviously, most dual users will find it easiest to get their regular and decaffeinated coffee at one location, and the coffeehouse that serves excellent coffee in regular and decaf versions is most likely to earn the loyalty of these customers throughout the day.“

„ I've heard that you're supposed to use decaf within 3 months of it being decaffeinated, but I didn't think it would make such a huge difference. Another thing I've noticed is that JJ Bean selects only Grade 1 beans and on the website of the roaster I have previously used it says "Premium" beans. Grade 1 = Specialty, Grade 2 = Premium. So it's probably both the grade and the green bean freshness that effects the taste, right?“

„Why yes, as a matter of fact, you do. When you pull out your supply of green decaf beans the physical differences between regular and decaffeinated beans is striking. Compared to the unprocessed beans, which are plump and green, the decaf appear stunted: and shriveled, with a brownish tint, almost as if they were already roasted. What path have these beans traveled to lose that component called caffeine, and take on this striking difference?“
