„Starpoint offers training on all the espresso machines they sell, mostly automatic, which are preferred by hotel outlets as they are easy to use and produce consistent coffee. Hotels represent a major slice of the fresh coffee market. Until recently, many foreigners staying in or visiting China griped that it was impossible to get a good cup of coffee anywhere.“

„The coffee bars serve quality regular coffee, blends and single origins. Now lattes and cappuccinos, and even the odd espresso are said to have been spotted in coffee bars, but not by me or by a fellow Italian barista competition judge.“

„Indian coffees are ideal for an espresso blend. The mild washed Arabicas with well-balanced body and acidity and lingering finish of chocolate notes are suited to be structured as a base for an espresso, with the high quality well washed robustas creating the rich, smooth buttery crema, the hallmark of a great tasting espresso.“

„Remember there is a range of foodsafe detergents available for weekly cleaning of the espresso equipment. In short, the oils in espresso coffee represent a double-edged sword. Without them the coffee wouldn't have that amazing aroma and flavour; let them get the better of you and it's a recipe for disaster. This article originally appeared in Fresh 7 “

„Depending on the type of grinding burrs, they should be changed out every 600 to 800 pounds of coffee that runs through them. Check with your espresso machine provider to find out the type of burrs your grinder has, and how often you should be changing them. When grinding burrs get dull, they no longer finely cut and slice the coffee. They will break and smash the coffee bean, affecting the extraction, and this will cause the coffee to taste burnt or bitter.“
