They know about the art of extraction and temperature importance; they are sometimes the sole Italian "authority" that talks about the importance of tamping; they push the scientific envelope on finding out exactly what happens inside that portafilter, then they share the information with the world.“

„These days it seems most of the big R&G boys, especially those out of Italy, sell pods. Illy, Lavazza and segfredo all have pods. In Italy the roasters have quite a bit of sway with the machine manufacturers. Most of the roasters opperate a system where by a cafe signing up to a two year contract with a roaster for supply gets a machine "at cost" or even for free (for duration of contract of course!)“

„I opened the can the day of the 8 person test, but 3 of the 8 got to sample the Illy pods about 6 hours after we opened the can. Again, air's a culprit. When you're up against most of the other pods in their individual packed foils, those go up, the illys go down, at least imo.“
