„The beans are then soaked in metheleyne chloride which bonds with the caffeine molecules. Then the coffee is run through a steam and water process that evaporates and rinses out the caffeine, after which the coffee is dried, usually with hot air to prevent mold and fermentation. The result: 96%-97% of the caffeine is removed without any sacrifice of taste. Because metheleyne chloride evaporates at approximately 120° F, much lower than the coffee roasting temperature (approximately 428°F), any residual methylene chloride dissipates during roasting. „ Why is this so? Espresso's water-to-coffee contact time is short, leaving some of the caffeine molecules locked into the plant fibers. A darker roast also tends to reduce caffeine content (this topic really gets people excited on the coffee newsgroups!) Fine Arabica coffees contain one half of the caffeine found naturally in the cheaper Robusta beans that are used in supermarket coffees.“

„The water process uses warm water under pressure to extract caffeine. The direct contact method uses water, pressure and methylene chloride to remove caffeine. Direct contact produces a more flavorful cup than the water process, and has been proven non-toxic through clinical trials. Both methods remove 96 to 98 percent of a coffee's original caffeine content.“

„Direct Contact Method. After softening by steam, the green beans are flushed with methylene chloride, which extracts the caffeine. The beans are steamed a second time, heated and blown dry. This removes almost all trace of the solvent.“

„Jay clues us in to the chemical decaffeination process which was used for this blend. Methylene chloride seems to be the most efficient way to remove caffeine from coffee with no discernible aftertaste. The beans are soaked in a chemical solution to extract caffeine and wax (a natural residue), then dried and shipped. The Swiss-water-process form of decaffeination is better for both the environment and the body.“

„It is a very effective solvent at the high pressures. When the coffee beans are exposed to the solvent, the caffeine migrates to the solvent. When the removal of caffeine is complete, the now caffeine-rich carbon dioxide is passed through either an activated charcoal bed or a bath of water to absorb the caffeine for re-use. Like other chemical methods, the Supercritical Carbon Dioxide method removes 96 - 98% of the caffeine.“
