„Even before the current crisis, illy recognized that to ensure a consistent supply of top quality beans, they needed to work directly with farmers to improve their skills and reward quality by paying a premium price. In 1991, illy began to offer an award in Brazil to growers who produced the best coffee-winners receive a substantial cash prize, plus a premium price for their crop. Additionally, in conjunction with the University of Sao Paulo, illy instituted an educational program that gives farmers the knowledge needed in areas such as agronomy, processing techniques, farm management, resource conservation and more, enabling them to meet illy's rigorous quality standards. In 2002, 1,245 farmers went through this program, which has since been expanded to other coffee growing countries such as Guatemala, India and Colombia.“

„Because illy is a single blend composed of beans from 7 to 9 growing regions, some organics may be present in the blend if they meet our rigid quality standards. Organic coffee has a very low yield per hectare—about 6 to 8 bags per hectare. This low yield is not compensated for by a proportionally higher price, so the farmer makes less, not more. Furthermore, and quite importantly, the cultivation of so-called organic coffee depletes the soil of its nutrients without sufficiently replacing them.“

„FALSE: The illycaffè blend is obtained by carefully selecting from different sources the best Arabica beans, which have a richer taste and a lower caffeine content than the lesser prized (and less expensive) Robusta beans. Because a cup of espresso takes no more than 30 seconds to brew, less caffeine, which is soluble in water, is extracted than in drip coffee—which takes anywhere from 5 to 7 minutes.“

„The tasting is also performed quickly, to facilitate the comparison between different samples. In order to prepare the coffee for testing, a small machine to roast the beans, another to measure the degree of roasting, a grinder and a boiler are all employed. The method most frequently used for tasting involves making an infusion by leaving approximately 10 grams of ground coffee in 150 cc of boiling water for about ten minutes.“

Due to the difficulty finding high quality green coffee, in 1990 illycaffè went to the source—making an agreement with top Brazilian growers and establishing an annual prize for the producer of the highest quality coffee. The winner receives a cash prize of $30,000 U.S. and a 30% premium price over market for the winning coffee lot. Second prize is $20,000 U.S., and so on, with even the 10th place finisher receiving $1000.“
