CoffeeGeek - Espresso: Espresso Blends, Turkish Coffee Drinkers (#)

„Eventually we discovered the joys of keeping a 'coffee kit' with us at all times, which consisted of an empty M16 ammo case with a minuture propane camping stove, ibrik (or 'finjan' as the Israeli Arabs call it), coffee, sugar, spoon, and lots of shot glasses. Guys would stand around the stove and argue endlessly over which method of brewing was best: "boil it", "No, bring it just before boiling 3 times", "My uncle adds the sugar after the second of 4 boilings", "No, fool, you never boil it with the sugar inside", "Bah, where's the 'hel' (cardamom)", "hey moron, just cause you Yemenites like 'hel' doesn't mean we all do"....“

Amazon.com: Gourmet Food: Ibrik (#)

„Originally designed to brew coffee in the hot desert sand, using this vessel to make coffee spread from Egypt to the Middle East to Europe then to Russia. This classic copper and brass ibrik is polished to a mirror finish then lacquered to protect the shine. This finest quality ibrik is made in Portugal where the art of brewing coffee spread through the invasion of the Moors and then trading and colonisation after the successful expedition of Vasco de Gama around the Cape. Formed with a wide body and a narrow neck, an oven effect is created in the brewing process.“

„Then all you need is some water and a heating source. You put the coffee in the Ibrik with the water...no filtering...you then bring the water to a boil (but bring it to a boil slowly) and remove the Ibrik....once the coffee and water has settled from the first boil repeat 2 more times..after the third boil pour(slowly)into a demi cup...sip very slowly and most of the grounds(more like sludge) will sit at the bottom of the demi. The coffee is so fine that it makes the drink sort of chalky.“

Coffee In Israel (INeedCoffee.com) (#)

„The ritual begins when reservists report from their homes with a special tool box containing a portable camping stove, finjan (actually an ibrik,) sugar, coffee, small glasses and matches for use on patrol or in the barracks. This culture carries over into civilian life when families go out camping. In the middle of the night, in the middle of nowhere, a family get together is not complete without the preparation of turkish coffee at the campfire or over the portable stove.“

CoffeeGeek - Turkish, Greek and Others - Kari Rippetoe's Review (#)

„An ibrik is a pot (size varies) that it wide at the bottom and narrow at the top with a lip for pouring and a handle sticking out of the side.  Coffee is made by filling the pot half to 2/3 full with water and then adding about one tablespoon (varies depending on the size of the pot) of very finely (Turkish) ground coffee.  The pot is then heated on a stovetop (or over a fire for you camping enthusiasts) until the mixture begins to foam at the top.“

Turkish coffee is a very fine grind, often containing cardamom, and it is brewed in a decorative pot called an ibrik, or cezve. To make the coffee, fill the pot two-thirds full of water. Add as much sugar as you like, and then top that with a spoonful of coffee.“

Turkish Coffee Tutorial (INeedCoffee.com) (#)

„Let the ibrik sit about 30 seconds so some of the grinds will settle. Then pour yourself as much of the coffee as you want, dividing the rest (if there is any) among your luck guests. Don’t pour out the last drop since the bottom of the ibrik will be sludge.“

Peet's Coffee & Tea (#)

„I make my coffee strictly as it should only be made, Middle East style. I use a special "Turkish" grinder and ibrik (vessel) purchased at Peets/Berkeley in the 80's. I brew an espresso size amount with lots of foam on top. This is the only coffee that will brew properly when made in Middle East style.“

Cezve is the correct Turkish term for what is commonly called an Ibrik in the United states. Ibrik is the Arabic term, and thus not used by the Turks themselves.“
