How We Select Our Coffees, and Cupping (#)
„We don't want to stand in the way of home roasting's great potential: it saves money and its exciting to try unusual varietals. Everyone caries Konas and Wallenford Estate Jamaica Blue Mountain, but they are not good values and they are not very exciting. We test roast every coffee to a City (Medium) roast or about an Agtron 50, and some we cup at 2 degrees of roast to underscore roast tastes and distinguish them from origin tastes. It's important to observe the differences between acidity and bittersweet created by the roast as they combine to produce or reduce complexity.“

„There are only 4 trade names that can legally call their product Blue Mountain coffee: Wallenford, Mavis Bank, Old Tavern and one other I can never remember. True Blue Mountain is actually grown at higher altitudes than most other island coffees, and much of Mavis Bank's farms are at 5000 feet. Nonetheless, it has the soft cup profile.“

„Some years ago it was not entirely clear whether any high-quality coffee from the Blue Mountain district of Jamaica was entitled to be marketed as Jamaican Blue Mountain, or whether the name properly applies only to coffees grown on a single plantation, the Wallensford Estate. Today, responsible roasters designate estate-produced coffees grown at over 3,000 feet in the Blue Mountain district of Jamaica as authentic Blue Mountain. Most will be either Wallensford (best) or Silver Hill Estate Mountain.“
