Tips on Coffee - Is it true that espresso has less caffeine than regular coffee? (#)

„Moreover, caffeine is more quickly assimilated when taken in concentrated dosages, such as an espresso cup.The myth of lower caffeine espresso comes from the fact that the darker roast beans used for espresso do have less caffeine than regularly roasted beans as roasting is supposed to break up or sublimate the caffeine in the beans (I have read this quote on research articles, but found no scientific studies supporting it.Anybody out there?). But espresso is prepared using pressurized water through significantly more ground (twice as much?) than regular drip coffee, resulting in a higher percentage of caffeine per millilitre. Here's the caffeine content of Drip/Espresso/Brewed Coffee: Drip            115-175Espresso     100         1 serving (1.5-2oz)Brewed       80-135  “

illy caffè North America (#)

„An unopened can of illy ground coffee will remain fresh for at least two years due to illy's proprietary patented pressurized system that extracts air from the can and replaces it with inert gasses at a higher-than-atmospheric level of pressure. This method guarantees a longer preservation time, maintaining flavor and aroma for over 24 months. At the same time it 'ages' the coffee, improving its aroma over time by causing its volatile aroma compounds to bind with the oils that are contained in the beans.“

Virtual Coffee: Making the Most of Your Home Espresso Machine (#)

„Consult your owner's manual for details. Also, most home espresso machines have a single boiler without a separate heatexchanger for the water brewing the espresso drinks, and thus have a situationwhere hot water is mixed with steam. Using both steam and hot water inextracting flavors from the coffee oils results in a thin, bitter espresso, ashigh temperatures (water) and much higher pressures (steam) are being exertedonto the coffee grounds.“

CoffeeKid - The Vacuum Brewer FAQ (#)

„This was the start of a long road that finally led to the mid 1940s when Gaggia first manufactured a reliable device that pushed water through superfinely ground coffee at pressures of 130PSI and higher. By comparison, a vacuum brewer probably only pulls water through a vac pot at maybe 1.5 times the pressure normal gravity provides.“
