They stated that Hawaii could avoid this ‘bad’ image by changing the 10% Kona and 10% other Hawaiian coffees, to at least 30% or 50%. „I find two conclusions to be drawn from all of this:One: Even if coffee drinkers buy their coffee at a supermarket, they (generally) will do better in terms of quality if they are willing to pay a bit more for whole beans and do the grinding themselves. Two: There is at present a rather impressive range of cup profiles available to the supermarket coffee buyer, from the almost effetely refined Illy Caffe, through the rugged Eight OClock Bean Original, to the acidy classic Dunkin Donuts, to the smoothly innocuous MJB European Roast, to the delicately aromatic MJB Hawaiian Blend. „This cup is a classic Kona in all respects, with a big, sweet flavor that somehow matches the immense blue-green appearance of the coffee seeds. It has the brightness that is lacking in so many low-grown Hawaiian coffees, and an almost piney aromatic accent to the cup. These big, heavy coffee seeds can be a challenge to roast in air roasters, since by their size and bulk, they won't agitate as easily in an air stream - cut back on the air roast batch sizes a little. „Today, a new mandatory certification program that guarantees origin is in place for all of Hawaii’s coffee. And this year, a landmark labeling law will also go into effect for all Hawaiian coffee, which will allow consumers to clearly distinguish a 100% Kona coffee from a blend. Any coffee containing less than 100% pure Kona coffee must be labeled a “blend,” and the exact percentage by weight of Kona coffee must be specified on the package. „For those unfamiliar with Hawaiian coffee geography, Kona is a small growing district about two to three miles wide and by twenty miles long that straggles along parallel to the southwest coast of the Big Island of Hawaii. Growing altitudes are relatively low in the Kona district (800 to 2,300 feet), but a regular afternoon cloud cover and rain plus splendid drainage seem to mimic growing conditions normally achieved elsewhere at higher altitudes. „Some people think that more beans make a better espresso but I do not believe that at all. There are very few coffees that by themselves have a good enough balance to make a single origin espresso, the exceptions that come to mind might be good Hawaiian or Haitian coffees. I find it usually takes three beans to make a good blend and one more if you want an extra note of distinction.
