Tea & Coffee 12/00 - COFFEE'S LOVE AFFAIR WITH KONA (#)

„Proponents of the change want the law to stipulate that the minimum be 30%, thus requiring not only greater use of the coffee but also making that blend component more noticeable in the taste of the coffee. “We had some visitors from Japan recently,” Lopez-Kuhn noted, “and they had several observations, one of which was that their fellow countrymen visit Hawaii, pick up either flavored or a K blend, take it home and say Hawaiian coffee is not good, not realizing it has little or no Hawaiian coffee in it. They stated that Hawaii could avoid this ‘bad’ image by changing the 10% Kona and 10% other Hawaiian coffees, to at least 30% or 50%. Japan laws require that a bag of coffee state the exact percentages of coffee contained in the package, and at least 30% of the content such as Kona, be required to name it a “ famous origin coffee”.“

The Coffee Review - the world's leading coffee buying guide (#)

„I find two conclusions to be drawn from all of this:One: Even if coffee drinkers buy their coffee at a supermarket, they (generally) will do better in terms of quality if they are willing to pay a bit more for whole beans and do the grinding themselves. Two: There is at present a rather impressive range of cup profiles available to the supermarket coffee buyer, from the almost effetely refined Illy Caffe, through the rugged Eight OClock Bean Original, to the acidy classic Dunkin Donuts, to the smoothly innocuous MJB European Roast, to the delicately aromatic MJB Hawaiian Blend. However, the tendency to promote brand over honest description means the coffee buyer may have some difficulty matching expectations to cup.Which leads to a third, bonus conclusion: Read Coffee Review before you visit the supermarket and buy the cup that fits.“

„"This is a very important development for our industry," said Hawaii Coffee Association (HCA) President Frank Kiger. "The labeling requirements in the revised law will allow consumers to clearly distinguish a 100-percent Hawaiian Coffee from a blend that uses both Hawaiian coffee and foreign coffee," he explained. "Most of the coffee roasted and sold in Hawaii that carries Hawaii identifiers are blends using only 10 percent Hawaiian Coffee and 90 percent imported foreign coffee. Now, roasters will be able to distinguish a Premium Blend coffee - one that may contain 30 percent or 50 percent Hawaiian Coffee - from one containing only 10 percent."“

„The 50th state, situated some 2400 miles from the west coast of the continental U.S., is the only one that produces coffee, and its crop has a deserved reputation as one of the finest in the world. The volcanic soil and tropical climate, tempered by light humidity and reliable afternoon rains, work together to create idyllic growing conditions and help impart some subtle but distinct characteristics of Hawaiian coffee. In general, Hawaiian coffees tend to be light-to-medium bodied and have from medium-to-high levels of aroma balanced with medium-to-lively acidity. “It’s the best coffee in the world—nutty and chocolatey and smooth,” says David Kingman, director of Kona Mist, a coffee roaster and retailer on the Big Island of Hawaii.“

Sweet Maria's Coffee Cupping Reviews: Archive G-K (#)

„This cup is a classic Kona in all respects, with a big, sweet flavor that somehow matches the immense blue-green appearance of the coffee seeds. It has the brightness that is lacking in so many low-grown Hawaiian coffees, and an almost piney aromatic accent to the cup. These big, heavy coffee seeds can be a challenge to roast in air roasters, since by their size and bulk, they won't agitate as easily in an air stream - cut back on the air roast batch sizes a little. We stocked the Kowali Blue Mountain earlier this year too, but their Extra Fancy was my top scoring Kona coffee over that and every other sample we received.“

„Today, a new mandatory certification program that guarantees origin is in place for all of Hawaii’s coffee. And this year, a landmark labeling law will also go into effect for all Hawaiian coffee, which will allow consumers to clearly distinguish a 100% Kona coffee from a blend. Any coffee containing less than 100% pure Kona coffee must be labeled a “blend,” and the exact percentage by weight of Kona coffee must be specified on the package. At least 10% Kona coffee must be present for a coffee to be called a “Kona Blend,” and that percentage also must be specifically stated.“

„The clear benefits to the consumer are, first, improved awareness of what they are buying by, second, providing them with the ability to differentiate blends from 100% coffees. The labeling requirements in the Truth In Labeling Bill will allow the consumer to clearly distinguish between a blend that uses both Hawaiian coffee and foreign coffee from a 100% Hawaiian coffee. HCA believes that the trend will be to increase the percentages of Hawaiian coffees used in the blends ultimately producing a higher quality product for the consumer.“

„For those unfamiliar with Hawaiian coffee geography, Kona is a small growing district about two to three miles wide and by twenty miles long that straggles along parallel to the southwest coast of the Big Island of Hawaii. Growing altitudes are relatively low in the Kona district (800 to 2,300 feet), but a regular afternoon cloud cover and rain plus splendid drainage seem to mimic growing conditions normally achieved elsewhere at higher altitudes. All Kona coffee comes from trees of a traditional strain of typica Hawaiians call Guatemala and is processed by the traditional washed or wet method.“

„..the worst cost way too much. So the goal with Hawaiians is to quit thinking that all Hawaiian coffee is good, and to realize that only a handful of coffees deserve the high price in terms of cup quality (you can easily argue that all deserve a high price in terms of the care and labor expended in producing them). And frankly, you must pay quite a bit for the truly great small-farm Kona.“

CoffeeGeek - Bean There - Pt 4: Roasting & Blending Espresso (#)

„Some people think that more beans make a better espresso but I do not believe that at all. There are very few coffees that by themselves have a good enough balance to make a single origin espresso, the exceptions that come to mind might be good Hawaiian or Haitian coffees. I find it usually takes three beans to make a good blend and one more if you want an extra note of distinction. Five beans in the blend might work well but more than that seems unnecessary.“
