  „From late August through January, the Kona coffee farmer is singularly focused on bringing in the ripe red coffee cherry, processing the cherry into coffee beans, and preparing for sale or storage of their coffee. Most Kona coffee farmers sell fresh picked coffee cherry, but there is a trend for farmers to add value by processing, drying, milling and even roasting. More than 100 private coffee labels are attached to Kona coffee.“

   Though coffee farms are found throughout the Hawaiian islands, it is Kona coffee, from the large island of Hawaii, that is best known and always in high demand.  Nature provides just the right environment for the coffee trees growing on the slopes of the active Mauna Loa volcano. Young trees are planted in black, volcanic soil so new that it often seems the farmers are planting their seedlings in rock instead of soil.  Afternoon shade from tropical clouds forms a natural canopy over the trees to protect them from intense sun. Frequent island showers keep the plants nourished with just the right amount of rain.“

Coffee has been grown in smaller quantities elsewhere on the islands since the early days of European settlement, but encouraged by the impending closure of sugar and pineapple plantations and the tourism-induced popularity of Hawaiian coffee, large commercial concerns now have established plantations on the islands of Kauai and Molokai. Similar efforts soon may follow on other islands.“

  Kona coffee is one of the most sought after coffees in the world.  The best coffee in Hawaii is harvested on small farms on the slopes of Mount Loa above the Pacific and is wet-processed.  The Hawaiian climate provides the perfect cloud cover to prevent the intense rays from the sun, creating what is called automatic shade.  Coffee in Hawaii is often of the Typica cultivar.  Interestingly, coffee in Hawaii is grown at a relatively low altitude which is said to produce an inferior tasting coffee.  However, Hawaiian coffees often display the density, color, and acidity of high grown coffees.  Quality is not necessarily a factor of the altitude, but more likely is a factor of how slowly the coffee is grown.“
