„How long is the brewing time of the espresso? If the grind has been adjusted correctly, then the time that it takes an espresso (about an ounce to 1 1/2 ounces of beverage) to brew after the machine's pump is started should be no less than 20 seconds and no more than 30 seconds. If it comes out faster, then the grind was too course, and if it comes out slower, then the grind was too fine. A good barista will constantly be adjusting the grind to make sure that the extraction time is proper.“

„Traditional filter brewing machines just use gravity to push the water through the coffee grounds. Espresso machines, on the other hand, use a pump to force the water through at 9 bars of pressure (but you know that - you read about it in the first edition!).Typically a filter brew will take 4-6 minutes to extract the liquor whereas espresso is brewed in just 20-25 seconds. Control of this brew time is of paramount concern to ensure great tasting espresso and the correct crema.“

„having made a few toddy coffees in my time, i'd suggest using a coarser ground than espresso grind. i've always been told the longer the brewing time, the coarser the grind. you mentioned seattle's best (now owned by starbucks...eeek)- their best-selling drink is a Naughty Toddy, Gloria Jean's is a Hotty Toddy- all use Toddy's process. i've asked managers at both places, and they use a medium roast, coarse grind- sorta like what you would use in an old fashioned percolator.“

„To extract espresso properly it is essential to use a burr grinder and to grind per order. The two major types of burrs used are flat and conical. Conical burrs are desirable because they increase the surface area of each particle and the amount of flavor that can be extracted from the coffee. Since conical burrs have longer cutting edges, the burrs can rotate at lower speeds which reduces the heat created. Flat burrs should be replaced after 600 pounds of coffee have been ground and conical burrs should be replaced after 2000 pounds of coffee have been ground.“
