There are varying opinions among coffee storageexperts both about what is in fact necessary for storing green coffee,and about what the ideal conditions for storing coffee are. We did, however,find that there is a consensus on three variables that we should be concernedabout: humidity, temperature, and warehousing conditions.“

Before, I mentioned how it is important for the production roaster to take part in the cuppings that decide which coffees will be purchased, and how they will be roasted. I would imagine that this is already fairly common practice. One more thing I want to stress along those same lines is the continued cupping of coffees well after you have initially decided on their roast levels.“
