Green Coffee Descriptions

Green Coffee Descriptions ()

„Notes: Basically, I cupped this specific washed Limmu against all otherYirgacheffe samples, and except for the particular lot of Horse Yirgacheffewe offer, it beat the others hands down. This Limmu will easily surpasswashed Sidamos, and our one broker even thinks it is better than the Yirgacheffewe sell...but I don't; there's just a tangerine peel twist to the acidityof the Yirg. that distinguishes it.“

Ethiopian Coffee Ethiopian Coffee

„Washed coffees of Ethiopia include Ghimbi and Yirgacheffe.  The former is more balanced, heavier, and has a longer lasting body than the Harrars.  The latter are more mild, fruitlike, and aromatic.“

Tea & Coffee 06/01 - East Africa... Good Coffee, Bad Times Tea & Coffee 06/01 - East Africa... Good Coffee, Bad Times

„When asked his opinion of the current crop of Ethiopian coffees, Bauer was enthusiastic. “Ethiopia has some really good quality washed Yirgacheffe and washed Sidamo right now. And they continue to produce some of the finest coffees in the world.” This nation’s bizarre auction system, where exporters must bid on coffees before having had the opportunity to cup them, prevents the best farmers from getting the best prices, thus making any entrepreneurial effort on the part of any one farmer to improve the quality of his or her coffee pointless at best. Exporters, likewise, cannot focus on any particular style or quality, or even establish a reputation for offering even a particular price/value relationship vis-ŕ-vis the coffee they offer.“

„This was due to (in my opinion, not the industries) a poor Yirg crop that lacked the vibrancy I associate with it. I went to Sidamo (not bad, certainly better that 2002 crop Yirgacheffe), Djimma (a real mistake - it was a good cup, but the bean grade was very poor which meant 20 minutes before roasting were spent fishing out the pebbles). However nothing gives my espresso the lift it needs like a good Yirgacheffe. So now it's back, its good and it's in most of my blends for sure.“

Brazilian Coffee Brazilian Coffee

„Brazil processes its coffee by the wet (washed), dry (natural), and semi-washed (pulped natural) methods. The vast majority of coffees are still processed via the dry method since Brazil is one of the few countries in the world that has the appropriate weather to do so successfully. Due to Brazil's distinct dry and wet seasons, the flowering and cherry maturation is homogeneous. This allows Brazilians to harvest coffee via the strip picking method and/or mechanically.“
