Green Coffee Classification (#)
„In the Brazilian method 300 grams of coffee is classified. The number of beans equivalent to one full defect is given below. For example, a set of three shells counts as one full defect. On the other hand one large rock counts as five full defects. If a bean has more than one defect the highest defect is counted. For example, a bean that is black and damaged by insects counts as one full defect due to its black attribute. The table is split up into two since Brazilian legislation allows a maximum of 1% of foreign defects. After counting the number of defects use the third chart to classify the type and its point rating.“

„If you use Colombian, Costa Rican, Nicaraguan, or Kona as a base instead of Brazilian you add flavor, but lose some crema so you'd need to add more dry-processed beans like Sumatran or Ugandan. Then you can add some lighter flavored beans like Papua New Guinea, Costa Rican Tarrazu, Kenya AA or Ethiopian Yrgacheffe to balance the blend with lighter hints of flavor. They’ll taste great, but won't produce as much crema as the Brazilian-based drinks will. The Costa Rican Doka makes an especially good base among these choices because of its extra body.“

„If you all are still interested in trying some fair trade coffees, use google to look up Brazilian DaTerra. Not only is it a fair trade coffee, but it is also certified by IQnet, which is a worldwide certification organization that makes sure the beans are grown in certain guidelines and standards. I've had a little of it myself and it is quite enjoyable. Like so many other Central and South American coffees, this Brazilian has a nutty taste almost like fresh roasted peanuts.“
