„The idea of marketing fairly priced products from cooperatives is not entirely new, particularly for people who were sympathetic to Central America's revolutionary movements of the 1980s. At that time, solidarity activists and organizations, such as the Boston-based group Equal Exchange, were importing and selling small amounts of Nicaraguan coffee to support that country's Sandinista movement, and paying farmers fair prices. Their support made the difference in many cooperatives keeping rather than losing their land when the Sandinistas lost power in 1990. The Fair Trade Federation, the national association of fair trade retailers and wholesalers, boasts over a hundred business members that import or market crafts with the primary motive of supporting cooperative producers with fair prices.“

„Still, sustainable coffee has a long way to go before it takes off among America's coffee drinkers. Most coffee still comes from big roasters who currently have little commercial reason to take interest in the issue. What's more, shade is just one of the environmental issues involved in coffee growing, making it difficult to define sustainability, as some in the specialty industry are trying to do. Two other critical issues are water pollution, which is a problem on many shade and sun farms, and the use of chemicals, which shade tends to reduce but not necessarily eliminate.“

„Costa Rica has set the standards for fine wet-processed coffee for the rest of Central and South America. The most famous coffees by region are Tarrazu, Tres Rios, Herediá, and Alajuela. Most Costa Rican coffee comes from a hybrid called caturra and is characterized as bright and full bodied. Other popular varieties are Mondo Novo and Catuai. The best coffees, which are grown above 3,900 feet, are designated as "strictly hard bean". The "good hard bean" classification is given to coffees grown from 3,300 to 3,900 feet.“
