„In countries where USAID was not involved, national coffee federations promoted the change, supporting the technification of 69 percent of Colombia's coffee and nearly 40 percent of Costa Rica's. In places including Mexico, Colombia, and parts of Central America and the Caribbean some 30 to 40 percent of all coffee land had been converted to modern reduced-shade systems by the early 1990s. Some countries, like El Salvador, missed the boat, their desultory attempts to convert slowed by war and revolution.“

„Costa Rica has set the standards for fine wet-processed coffee for the rest of Central and South America. The most famous coffees by region are Tarrazu, Tres Rios, Herediá, and Alajuela. Most Costa Rican coffee comes from a hybrid called caturra and is characterized as bright and full bodied. Other popular varieties are Mondo Novo and Catuai. The best coffees, which are grown above 3,900 feet, are designated as "strictly hard bean". The "good hard bean" classification is given to coffees grown from 3,300 to 3,900 feet.“

About 40% of Costa Rican coffee now goes through co-operatives, and the British party was interested to find how hard the co-ops were working to change the individual farmer’s idea of what coffee could do. They are having some success, and their farmers are reasonably well off, and looking forward to the next internet auctions in May. Last year, the best coffee fetched $10.35 per pound, which had an encouraging effect on individual farmers.“

Although Costa Rica produces a variety of coffees, those that reach American specialty coffee menus usually are very high-grown Strictly Hard Bean (SHB) coffees from regions near the capital of San Jose in the central part of the country: Tarrazu, Herediá, Tres Rios, Volcan Poas. At best Costa Rica coffees from these regions are distinctive in a way that defies simple, romantic description. When good they are clean, balanced, and resonantly powerful.“
