„They organize travel seminars to Chiapas and promote crafts development for Mayan women. They also import cofee from Mut Vitz and promote Fair Trade among Mexico solidarity activists and people in the St. Paul area. „But the fine coffees of Mexico are a different matter. They are not among the world's greatest coffees, because they often lack richness and body, but at their best they are analogous to a good light white wine delicate in body, with a pleasantly dry, acidy snap. If you drink your coffee black and like a light, acidy cup, you will like the best Mexican coffees.“

„For example, in 2004 the NCA successfully completed its efforts to convince the U.S. government to rejoin the International Coffee Organization (ICO). At the Convention, we have on hand the ICO’s Executive Director, Nestor Osorio, and U.S. Undersecretary of State Shaun Donnelly, to share experiences, perspectives and lessons.“

„In order to improve balance on the demand side, the ICO is therefore seeking to increase coffee consumption among the 80% of the world population who do not currently drink coffee, using appropriate strategies for traditional markets, new and emerging markets, and coffee producing countries themselves. The improvement of coffee quality through the implementation of an ICO Coffee Quality-Improvement Programme (Resolution 407) is also a major initiative designed to increase coffee consumption, together with targeted promotional and educational programmes.“

„His studies at UC Davis helped him design the Puroast process, which has its origins among roasters in the Andes. (Going back ever further, a process of slowly roasting beans over an open fire was used by early coffee drinkers in Arabia.) The company roasts its beans in sealed drums which are fueled by sawdust pellets, a renewable biomass fuel. Using this method, beans are shielded from burner gases which could deposit combustion residues on the beans. Further, biomass fuels are part of the carbon cycle, clean fuels which do not contribute to global warming.“

„Organized into basic categories like "Sweet Talk" (questions involving sugar), "Fire and Ice" (we learn why water boils and freezers burn, among other things), and "Tools and Technology" (the best kind of frying pan, for example), the book also provides illustrative recipes like Black Raspberry Coffee Cake (to demonstrate how metrics work in recipes) and Bob's Mahogany Game Hens (showing what brining can do). With technical illustrations, tips, and more, the book offers abundant evidence that learning the whys and hows of cooking can help us enjoy the culinary process almost as much as its results. --Arthur Boehm“
