„ This brings me back to the point I am trying to make in our short time here together on these pages: There is nothing better you can be doing than exploring the origins in your blend. By digging a little bit past the surface of what is sitting in the bean hopper on your grinder you can gain the knowledge and the confidence to serve your customers (and yourself) a fantastic cup of coffee. In the past four years of being a barista, from Montana to Seattle, Wash. I have not found anything more rewarding in knowledge than attending cuppings and single-origin shot parties with other people just as hungry to understand good coffee’s nuances.“

„ This level of brand discipline is typical of larger chains, but it’s worth noting that Starbucks, the world’s largest coffeehouse chain, uses a variety of color schemes, fixture designs and seating options while maintaining strict branding standards related to the company’s product, menu, display, and beverage preparation. Starbucks spokesperson, Lara Wyss, says, “We want the stores to have a similar look and feel, but we work very hard to incorporate design elements that will make each location unique and locally relevant. It is important to find a balance between overall consistency and subtle differences to make it relevant to a particular community.”“

„ However, if you make the effort to produce a proper espresso, you should select a blend that is consistent with the quality of espresso the customers deserve. Check the blend's performance drawing actual espresso (making brewed coffee to test espresso beans is a meaningless exercise). The physical properties, such as color, body and crema, and the flavor characteristics, such as aroma and taste, must be appropriate and in proper balance. Most blends focus entirely on flavor and perform poorly on color, body and crema.“

„An excellent way to do this is to write down the three most prominent flavor notes you find in the cup. Let us say that for some reason you have put together a blend where the three most prominent flavor notes are cherry, dry cocoa and a potent skunkiness (don't look at me, it's your blend!)Now over the course of a year, or maybe even a few months, you start to find it hard to identify the cherry note in the cup, and your skunkiness has turned into a pleasantly soft herbal note. Changing the roast-level of one or more of the components of the blend, or even changing the components themselves, can help you maintain a consistent blend profile.“

„(b) A listing of the geographic origins of the various Hawaii-grown coffees and the regional origins of the various coffees not grown in Hawaii that are included in a blend may be shown on the label. If used, this list shall consist of the term "Contains:", followed by, in descending order of per cent by weight and separated by commas, the respective geographic origin or regional origin of the various coffees in the blend that the manufacturer chooses to list. Each geographic origin or regional origin may be preceded by the per cent of coffee by weight represented by that geographic origin or regional origin, expressed as a number followed by the per cent sign. The type size used for this list shall not exceed half that of the identity statement.“
