„   He says that he responds to new membership inquiries every day, but it's often difficult to convince small business owners to make the financial commitment. "Once I explain that you have to pay money to join and that you have to commit to buying a certain amount of green beans, a lot of people aren't interested," he says. "It's typically a commitment new roasters don't want to make. But those who have been in business for a while are probably roasting at least 10,000 pounds, so it's not so scary."“

„I'd like for us to return to cupping for a moment. Before, I mentioned how it is important for the production roaster to take part in the cuppings that decide which coffees will be purchased, and how they will be roasted. I would imagine that this is already fairly common practice. One more thing I want to stress along those same lines is the continued cupping of coffees well after you have initially decided on their roast levels.“

Home Espresso FAQ Home Espresso FAQ

„Or are you the type of person who needs a cup or two of coffee just to get your mental gears in motion?     Here’s what I evaluate upon encountering a new machine for the first time: Exterior finish (I prefer unpainted stainless steel.); placement and size of controls (Bigger and beefier is better than chic.); size and weight of filter holder (Bigger and heavier is better.); size of water reservoir; capacity and ease of removal of drip tray (Can it be removed without sloshing?); and the presence of a heavy duty grounded electrical cord set.     I would not personally own a machine unless it had this list of features: A cast brass boiler instead of aluminum; a brass steam valve that was carefully machined to operate smoothly; a preponderance of brass and copper tubing instead of aluminum or plastic; at least 1,000 watts of heating power; and an exterior finish that reflects the same quality as the rest of the componentry.     If I get a chance to demo a new unit I try to discern these things: how long it takes to come to operating temperature; if the water will remain reasonably hot during the length of the pour; how difficult is it to change to steam mode and how long does it take to produce useable steam pressure; and how long the machine takes to recover from steam mode back to brewing.“

„   “It [the Internet] certainly can bring awareness to a certain level but I think the bottom line is, as a buyer in the industry, you still have to get the teas in your hands and in the cup and taste them and sort through that,” says CEO of San Rafael, Calif.-based Mighty Leaf Tea, Gary Shinner, who cautions against the same potential slump in quality. “And you have to work with the knowledge of the importer you are working with or the broker you are working with, or sometimes, if you are working with the estate itself.“

„   “I think it’s easier to present a white tea to a customer, to be honest, who drinks a lot of green tea to begin with. I think it’s much harder for a customer who drinks a lot of black teas or who drinks a lot of coffees. If you drink a lot of green tea your palate is already inclined to look for subtlety, attuned to lighter differences in flavor. Sometimes I even nudge customers in that direction,” says Waddington.“
