„ Obviously, our client didn’t share any of our reservations, as the coffee bar was stunning—contemporary with a true Caribbean feel. In the midst of the impoverishment, the coffeehouse boasted small, hand-crafted tin roofs covering the entire bar area, and the décor was a mix of soothing, pastel colors complementing indigenous artwork. What took us by surprise the most, however, was the ingenuity of our client to have cut a grand, arching opening in the wall between the coffee bar and his pizza business next door so people could easily walk from one business to the other.“

„Not only did this book bring back fond memories of Kansas City coffeehouses for me, it gave me lots of good ideas for my own coffeehouse. I now feature some of the beverages from the book and a couple of the desserts and my regular customers love them. Especially good are the Westport Classic Cup Scones, Pumpkin Brownies, and the shortbread.“

„In most cases, from the day you sign your lease and go through the process of designing your coffeehouse, planning your menu, and building out your store, the time frame is four to five months. Some people want to do it faster, but the process can rarely be completed in less time.“

„He suggests being wary of suppliers that try to be all things to all coffeehouses, and urges coffeehouse owners to tour the supplier’s place of business, if possible. “If they brag about service, call them on a Saturday afternoon and ask them why your espresso doesn’t have crema,” suggests Teahan. “If no one calls you back, or if someone calls you to set up an appointment, that’s no service, but an answering service.”“

„By the turn of the century, coffeehouses made appearances and became centers of social, political and business interactions. The first coffeehouse was established in New York in 1696. Merchant's coffeehouse opened in 1737 in the Wall Street area and was the site of many historic events, such as the reaction to the Stamp Act in 1765 and the mass meeting after the battles at Lexington and Concord. Merchant's coffeehouse was also the birthplace of the first American financial institution, the Bank of New York.“
