„The Sulawesi and the Indian Pearl Mountain, on the other hand, added spiciness without harsh acidity. The Colombian San Augustin, the Costa Rican Doka, the Nicaraguan Segovia, and the Kona Captain Cook make very good regular coffees, but don't have enough flavor to use in espressos except as a base. The Brazilian doesn't add much flavor either, but it has good body and great crema to make a wonderful base. You could then use more flavorful beans like Ugandan, Indian Pearl Mountain, and Ethiopian Harrar to make a great blend.“

„Costa Rica has set the standards for fine wet-processed coffee for the rest of Central and South America. The most famous coffees by region are Tarrazu, Tres Rios, Herediá, and Alajuela. Most Costa Rican coffee comes from a hybrid called caturra and is characterized as bright and full bodied. Other popular varieties are Mondo Novo and Catuai. The best coffees, which are grown above 3,900 feet, are designated as "strictly hard bean". The "good hard bean" classification is given to coffees grown from 3,300 to 3,900 feet.“

„The good co-operatives are working on this. About 40% of Costa Rican coffee now goes through co-operatives, and the British party was interested to find how hard the co-ops were working to change the individual farmer’s idea of what coffee could do. They are having some success, and their farmers are reasonably well off, and looking forward to the next internet auctions in May. Last year, the best coffee fetched $10.35 per pound, which had an encouraging effect on individual farmers.“
