„The process is a good one because it is fairly fast and quite easy, taking only the time it takes to boil the water then four additional minutes to steep, the coffee is never boiled, the grounds all get brewed exactly the same amount of time, and the grounds are totally exposed to the water for an extended length of time as opposed to a drip machine where the water gets one trip through the grounds and that's it. The negatives are minimal- some amount of fine grounds end up in the cup and there is a bit of a clean-up to deal with in cleaning out the pot and the strainer.“

„ Another change is that I am grinding (relatively) finer now by about one click than I had previously. I am now achieving a twenty-five second double shot that is never more than two ounces, and usually just a little short of that. I find that the pull starts darker, and stays dark longer as well. Near the end of the pull as the stream of espresso gets light in color, it still contains streaks of darker colors where before it became a light colored stream with no other color definition.“

„If a spotless kitchen is a priority in your life, I would suggest that you think about going out and buying your espresso at a coffee shop. If you brew at home there will be coffee grounds on the counter that spilled out of the portafilter, grounds will be all around the grinder, water will get on the floor when you remove the portafilter or the drip tray, you will drip coffee when you go to empty the portafilter basket, there will be coffee grounds in the sink, there will be two or three (or more) towels stained with coffee each time you brew (find some brown towels, now!), and you will end up with a sink full of cups, saucers, pitchers, shot glasses, and more.“
