„You allow this to steep for four minutes then gently press the plunger downward. If you have to press hard then you ground the coffee too fine or your grinder creates too much coffee dust. The plunger pushes the strainer to the bottom of the pot, straining out all the grounds and leaving a wonderfully delicious and rich pot of coffee. The strainer is a fine-mesh metal screen so there areno paper filters to replace or to taint the taste of the coffee.“

„You will spend much thought and energy tweaking your grinder for the perfect pour. Life with your espresso machine is better if you just invest in two grinders: one very good tool for espresso and a cheap little blade grinder for your other coffee brewing needs. Some espresso enthusiasts swear by their manual, hand-cranked grinders. See the Chrome Peacock Lever Machine Web site, described above, for a source for hand-cranked coffee mills.“

Espresso Grinding and Dosing Espresso Grinding and Dosing

„To extract espresso properly it is essential to use a burr grinder and to grind per order.  The two major types of burrs used are flat and conical.  Conical burrs are desirable because they increase the surface area of each particle and the amount of flavor that can be extracted from the coffee.  Since conical burrs have longer cutting edges, the burrs can rotate at lower speeds which reduces the heat created.  Flat burrs should be replaced after 600 pounds of coffee have been ground and conical burrs should be replaced after 2000 pounds of coffee have been ground.“

„We grind wheat and beans as well. This grinder, if you choose the espresso setting will make some of the nicest pastry wheat flour you'll ever see. It's not set up to make 10 pounds of flour, but if you only use a few cups of flour at a time, and like fresh ground whole wheat, this grinder is as good as it gets. When's the last time you saw a genuine floor grinder for less than 50 bucks?“
