„Doug Welsh, the director of coffee at Peet’s Coffee & Tea in Emeryville, California, pointed out that, while espresso plays a vibrant and essential role in the health of the specialty coffee industry, through espresso consumers are not learning about or connecting with the coffee itself. “There is something fussy about the approach to espresso right now that doesn’t allow for a simple, beautiful cup of coffee. A cup of coffee should be accessible, simple and just plain great. This straightforward approach is more of something you see with brewed coffee and not espresso.” Welsh also addressed the math involved in contrasting the espresso market versus that for brewed coffee, “I don't say espresso isn't encouraging consumption, but that with the size of the coffee cups we're all serving these days, maybe a great cup of brewed coffee encourages it more.“

„6) Begin pouring milk into the espresso.  For a flower pattern, pour into the bottom portion of the cup, approximately an inch from the bottom of the cup.  Pour gently into one spot and do not shake the pitcher.  As the cup is about half filled, begin to shake the pitcher back and forth while slowly moving backward.  The flower pattern will move forward and fill the cup.  I have found that a shaking motion via movement of the wrist is better than physically moving the hand back and forth.“

Crema, the red-brown foam that is the index of full flavor in espresso, traps the more noble flavors present in the roasted coffee in a cup, as well as offering the palate a pleasing, thick texture to the coffee. Crema should be very thick featuring a velvet mouth-feel, and it should remain in the cup for at least two minutes after brewing.
