Espresso Blending Techniques (INeedCoffee.com) (#)
„This was due to (in my opinion, not the industries) a poor Yirg crop that lacked the vibrancy I associate with it. I went to Sidamo (not bad, certainly better that 2002 crop Yirgacheffe), Djimma (a real mistake - it was a good cup, but the bean grade was very poor which meant 20 minutes before roasting were spent fishing out the pebbles). However nothing gives my espresso the lift it needs like a good Yirgacheffe. So now it's back, its good and it's in most of my blends for sure.“

„In the September Fair-Trade article we wrote that in North America Fair-Trade-certified coffees are available from only three non-Latin-American origins: Sumatra, the Yirgacheffe/Sidamo region of Ethiopia, and the Harrar region of Ethiopia, and furthermore that these coffees have been available here for only two years. Beth Ann Caspersen, Quality Control Officer for Equal Exchange, a distinguished green coffee dealer and roasting company, points out that, in fact, there are three additional Fair-Trade origins available in North America: East Timor, Papua New Guinea, and Tanzania. Beth Ann goes on to write that: "non-Latin American Fair Trade coffees have been sold on the U.S. market for much longer than two years.“

„The commonly known Ethiopian producing regions are Harrar, which boasts an excellent premium coffee with balanced complexity; Sidamo, which produces an unusually sweet and robust coffee; Yirgacheffe, where the coffee is profoundly bright and acidic; Limu, known for coffee similar to Sidamo in cup quality; and Djimma, whose coffee is full-bodied and earthy. Of these origins, the washed coffees that are fermented are the cleanest and most desirable, although there is still a market for unwashed, sun-dried coffees.“
