Espresso Blending (#)
„Experiment with different roasts of each coffee in the blend in the same manner you experimented with adding other coffees to the Brazilian base. Roast one coffee a little lighter or darker than the other coffees in the blend and note any differences. It is usually preferred to roast each coffee separately to its own individual peak and then blend to create the most complexity.“

„So one reason coffees are blended in the commercial world might be the use of lower-quality coffee in the blend. Another reason might be to create a proprietary or signature blend that leads consumers to equate a particular coffee profile with a particular brand image; consumers don't often call Starbucks by the origin names used in the coffee but simply as "a cup of Starbucks" as if the dark carbony roast tastes were somehow exclusive to that brand. Coffees are also blended to attain consistency from crop year to year. This is done with major brands that do not want to be dependent on any specific origin flavor so they can source coffee from the least expensive sources.“

„The espresso list is far more numerous. The house blend actually seems something of a token to those who expect to find one, otherwise all the espressos are carefully chosen single origins from Costa Rica, Brazil, Colombia, Mexico, Java, Kenya (one of the Boot secrets, as they cherish it for its relatively light acidic quality), Ethiopia, Panama (from the Ruiz plantation), Haiti (caffeine-free) and an Indonesian Celebes Toraja Kalossi.“

„Helena coffee performs as an espresso. Most gourmet coffees do not lend themselves well to espresso and, as a consequence, most espresso coffee is a blend. St. Helena coffee, to the contrary, has received positive feedback from Italian roasters and cuppers extolling its performance as an espresso.“

„My second focus was having the blend not have too much character so that it can be used as a base blend for a "low-caf" espresso. This means it should work well as 50-75% of your blend where you add other caffeinated coffees to give more aromatics and flavor: my choice would be a Ethiopian Harar, or a Central American (see our Blending Basics article for more). Why do we call this Donkey Blend? Frankly, I can't remember .“

„Espresso is simply a blend of coffee beans based on the blender's taste; the blend at one store will differ from one down the street. Although the blends often contain dark roasted coffee, they also might contain other beans to balance and round out flavors.“
