„APECAFE has been working to improve the quality of their coffee by contracting extension workers to provide trainings and technical assistance to the farmers. In 2003, its coffee was rated one of the best coffees in El Salvador by the Specialty Coffee Association’s Cup of Excellence competition. Extension workers are also providing assistance to the farmers in organic production, enabling them to protect the environment and earn higher prices for their coffee. They plan to begin selling certified organic coffee to the international market within two years.“

„Equal Exchanges fair trade practices help build pride, independence and community empowerment for small farmers and their families. A coffee processing plant in El Salvador, community stores in Colombia, the training of doctors and nurses in Mexico, reforestation programs in Costa Rica, new schools in Peru these are all examples of the initiatives that co-ops have taken in their own communities with the income from fair trade.“

„A core group of experts meeting in Washington arrived at this conclusion during a recent evaluation of the outcomes achieved by " The Coffee an Biodiversity" project in El Salvador. The 3 year-project that will close in December is being implemented by the Coffee Research Foundation (PROCAFE) and Salva Natura, a local NGO, associated with the Rain Forest Alliance, an institution that certifies the production of environmentally friendly. It is sponsoredby the World Bank and the Global Environmental Facility (GEF), In the present scenario of record decline in coffee prices, shade grown coffee represents a new option for coffee growers. According to project coordinator, Inés Maria Ortiz, "We have been able to create a platform for differentiating El Salvador's coffee, in such a way that we hope that the success achieved by the producers will encourage the development of a national policy in this area".“

Nicaraguan coffee growers of all sizes and from all regions were invited to submit samples for the 2004 Cup of Excellence®.“
