„One of the best ways to make good strong coffee with little skill and little money. You can buy some of Italy's finest caffe' espresso in small amounts ground for this purpose (so you don't even need a grinder.) It is very light-weight and transports easily. Care is simple, don't use soap, just some water and a paper towel (I've read baking soda, but have never had to use it.)“

„The color range for coffee used to make espresso in Italy is displayed in the photograph to the right. In Northern Italy, regarded as having the sweetest caffe espresso, coffee is roasted to a deep mahogany brown and the roasting process is halted just before oils would be forced out onto the surface of the bean. „Machines of this type were made obsolete by a patent filed in 1946 by the Gaggia Company of Italy. I date the arrival of the caffe espresso on the world scene to this 1946 patent to create pressure with a spring piston assembly. Thus, temperature could be independently adjusted and we see the emergence of true espresso crema.“

Another favorite drink in Italy is the caffe freddo shakereto, a shaken drink made with sweetened espresso and crushed ice. In Thailand and Vietnam, an iced coffee is more likely a drink made with robusta drip coffee brewed double strength and accented with sweetened condensed milk.“

In fact, a sure way to reveal that you are an American in Italy is to order a cappuccino after lunch, or a caffe latte at any time. In the United States, caffes often distinguish between caffe latte (made with espresso) and café au lait, which substitutes ordinary American filter coffee for the espresso.“
