Counter Culture Coffee - Coffee Driven People, People Driven Coffee (#)
„This is a skill that is mastered after many years of working on the farms. The higher the altitude of the farm, the slower the new growth develops. The rainy season has started here and it has awakened the coffee trees. This is one of the most beautiful stages of the coffee process. Flowering coffee trees are a stunning spectacle. The main flowering only last 2 to 3 days and after that we will see around 2 more flowerings, which are not as intense. When the main flowering is at its pinnacle, Mauritania looks like it has been hit by a snowstorm. Arabica coffee plants are primarily self-pollinating, but bee pollination is much more important than we thought. Bee pollination can double a coffee crop’s yield. These busy bees help us on our farms by turning each flower into healthy cherries, usually containing two coffee beans each. Of course these “workers” don’t get the recognition they deserve. As the flowers begin to fall, tiny coffee cherries begin to emerge. Now we let nature take its course. In next month’s issue, I will share with you the replacing and pruning of the shade trees, how we make our natural compost, and I will give you an update on the size of the coffee cherries. Until then… saludos desde El Salvador.“

„Whereas robusta coffee can be grown between sea-level and about 800 metres, arabica does best at higher altitudes and is often grown in hilly areas. As altitude relates to temperature, arabica can be grown at lower levels further from the Equator, until limited by frost. All coffee needs good drainage, but it can grow on soils of different depths, pH and mineral content, given suitable applications of fertilizer.“

„Guatemalan coffee is grown at an altitude ranging from 1,000 to 6,000 feet above sea level. Most of the best coffee plantations are located on mountain slopes. The reason Guatemalan coffee is of such high quality is due to the fact that "the finest coffee comes from highest altitudes".“
