„Today's espresso is a 1.25oz - 1.75oz beverage that is brewed under the proper conditions of 190-200F water, at least 130 psi of pressure which would force said water through finely ground fresh coffee, extracts more oils, aromatics, and flavor than any other coffee brewing method. A very opaque, thick and dark liquid, capped by red-golden dense froth, also known as crema is the result.“

The brew pressure, for extracting espresso coffee from finely ground java, can be produced by a vibration pump, common in all home machines, a hydraulic piston manual lever configuration, or a rotary or volumetric pump, the likes of which are found in high end commercial machines.“

And once, I wrote Braun enquiring why their machines never seem to produce temperatures hotter than 180F at the showerhead (in the carafe, the coffee is closer to 175F), and they told me that their extensive scientific study has "proven" that 175F to 180F is the optimum brewing temperatures.“

„The deal was this - our two tasting judges would be "blind" as in they would not know who brewed what. Each competitor would get five minutes' warm up on their station, then have to pull a traditional double (2 cups, 1 to 1.5oz volume brewed per cup, 2 to 3 oz total brewed volume) as soon as the five minutes warmup was up. We'd serve the four drinks to the two judges - each judge would have one drink from each competitor.“
