CoffeeKid - A Big Fall Update (#)
„When I was in Portland a few weeks ago for the NASCORE show, I tried a couple of good coffees (to be honest, most were bad), and one exceptional one - the folks from Stumptown. I tried some of their espresso blend as pulled on a La Marzocco FB70 machine by none other than John Blackwell of ESI , and the shots were great (John had help from the Swift grinder he took part in designing).“

„This moniker is given to the machines out there sold as "espresso machines" which are in fact not true espresso machines in the modern sense of the word. They're easy to spot - they usually have a screw down top, feature a 4 cup carafe for your brew, and usually cost under $60 or so. These are electrically maintained "moka pots" in that they brew with steam pressure only (about 1.5 BAR maximum) and do not produce a modern day authentic espresso. Avoid unless your only concern is milk-based drinks.“

„When you tamp with 20lbs or less pressure, you're increasing the chances of a phenomenon called "channeling". Water always seeks the path of lease resistance, and when you tamp light, or don't tamp at all, you run the risk of portions of your lose grounds compacting quicker than others, and water will go through the parts of the coffee that are the least compacted.“

„Even more impressive is that whole "better" thing can happen in your own home. If you're in these groups or similar ones, consider this your starter's guide to never going back to Folgers. But be warned. Quality coffee and espresso is a serious, and I mean seriously serious sinkhole of funds, at least for start up costs.“

„I got a tour of Espresso Coffee Machines Co., which is affiliated with Nuova Distribution (the US company), but ECM is based in Burnaby, BC. Let me tell you, that place is an Espresso lover's dream shop, especially if you can get into the back storeroom. They have what looks like a quarter million dollars worth of antique machines, including a first gen Victoria Arduino, many of the original Nuova Simonelli machines, and many other major makers, all just sitting way up on this semi-display shelf that only the staff can see as they go about their business. I was in awe.“
