CoffeeGeek - The Latte Gambit (#)
„As Starbucks spreads the gospel of lattes throughout America, the dream of opening an espresso bar and roasting your own continues to attract coffee lovers to the business, and Seattle remains a mecca for many of them. Neil Edwards, who runs La Tazzina, a Kansas City espresso cart, grew up in Prairie Grove, Ark., and has never set foot in Seattle. But when it came to choosing an espresso blend for his business, he turned to the emerald city and quickly narrowed his search to Espresso Vivace and Caffe D'arte.“

„This is not to suggest that it is almost impossible to produce good espresso but rather that it can only be done consistently when all the elements are understood and respected. In roasting and blending for espresso it is necessary to carefully choose quality coffee beans, to roast them to the proper point to develop the desired character. Espresso is almost always produced from a blend of coffees, the challenge is to blend them for refinement with strength and having harmony while allowing individual notes to sing out.“

„If you want to roast your own, then go for a light roast. The final roasting is done in the Cezve, so if your roast is already too dark you are not going to get the right effect. Remember, the lighter the roast, the more acidic the coffee and the higher the caffeine content. So you should experment a bit to determine what you like best.“

„I was thinking you were trying to stay under $4000.00 at least initially to see if it'll even work out. Plus those machines look like they take up alot of space and I don't know what kind of space you're thinking of renting (don't buy a retial space, there isn't any tax advantages and they usually don't appreciate like residential) Most coffee shops start out as kiosks some where and then when the person is ready to jump with both feet in they go for it. Let me know if you have any questions to that regard. Joe“
