„I never realized the importance of having a good coffee grinder until buying a Krups Moka Brew and finding my trusty whirly blade grinder could not provide repeatable grinds which the Moka Brew requires to make consistently great coffee. My first attempt at upgrading the grinder was with a bargain basement Melitta Burr. I will let my review elsewhere on this website describe that fiasco.“

„First I tried using my mother's whirly blade grinder which, she claims, "makes a finer grind than you could ever want." It was a disaster. I was getting my espresso shot in about 7 seconds instead of 25. In other words, it was coming out not as crema, and without much pressure, but as coffee. Second, I went to my local store, and used their professional grinder, which I set to "espresso" (the last click before "Turkish", which is the finest grind).“

„They tell me that the grind is the other really important part and the whirly blade grinders make too big of a variety in the grind for good results, but if you don't have a burr grinder (like me...yet) I discovered that to help you get more uniform grounds, put a few more beans in than you will need and after you grind your coffee (15 seconds for drip) put it into a yogurt strainer (3 bucks at your local kitchen specialty store) and keep tapping. The little dust falls out, the smallest ground go to the bottom. Scoop from the yogurt strainer.“

With espresso grinds we run the paradox of requiring a fine enough grind to give the correct brew time whilst having a large enough surface area in the wad of coffee to give the extraction of the right compounds in the correct quantities. In order to do this we require a completely different kind of particle size distribution to that found in filter coffee where the particles tend to be of a more even size (see fig. 1).“

„I'm really serious about this. If I get emails from people attempting to troubleshoot their poor espresso, and I find out they don't have a grinder or have a cheap whirly blade grinder or an equally cheap Salton-type grinder, I'm not going to even respond to the emails. You read the advice here - follow it.“

„As a young kid I would occasionally drink my parent's coffee. I remember it typically being brewed in any standard brewer with store bought canisters of grinds. It tasted sweet like candy because my mother would add tons of cream and sugar, and I drank it watching the Johnny Carson show. As I grew up, I began to drink lots more coffee, and started to enjoy dark black coffee from some cafes that knew what they where brewing.“
