  „ I knew nothing about grinding and tamping save for what I read on this website.  I did my homework and research on machines and had pretty much narrowed it down to the Andreja Premium and the La Spaziale S1.  I liked the idea that both were able to be plumbed in  - actually, the S1 has to be plumbed in.  I just felt that if I never had to bother with filling the resevoir, that I would love that.“

  „ It seemed most everyone was leaning to the fully automatic units vs this manual machine.   I wanted more control over my expresso and do not find grinding, tamping, and dispensing any problem at all.   I did seriously consider a fully plumbed unit, but have adapted well to the manual addition of water as needed.   At least this eliminates the remote possibility of another water leak in the kitchen and one less water line.“

  „I, personally, do not throw these basics techniques by the wayside, however in a high volume shop (like, say, the one I work in) Grinding, dosing, and leveling for each individual shot is just not possible. We usually fill the doser with grounds prior to and during a rush (we use a Macap grinder with the level switch), but I try to stress to my employees as much as possible the importance of tamping. However the leveling part, for us anyway, goes out because the grinder is already to capacity and doses the proper amount.“

  „I'm using a very good Guatemalan Antigua espresso coffee on my Gaggia Carezza. The grinding is perfect as well as the tamping and after I follow all the instructions, still can't obtain the CREMA that I'm supposed to. This is more evident after my first shot. I do the priming, wait for the correct temperature and my CREMA is far from present.“
