  „ It is not difficult, and if you buy a can of Lavazza (which is a decent grind, a little on the course side though,) one can easily master the tamping portion of the preparation.  With Lavazza espresso, it takes a good firm press to properly tamp; the resulting lever pull is almost but not quite equal in force and will be very smooth (no straining allowed) and will start rich flow enhanced with crema.  Then you can make the move to grind your own beans and match the fineness to your tamping technique.“

  „Still experimenting with the expresso shots - I seem to get a pretty good shot using expresso-grind coffee with a very light tamp (the manufacturer recommends a coarser-than-usual grind for the expresso maker.)  Lots of crema, not bitter.  Going to experiment with a slightly coarser grind and a tighter tamp.“

  „The alteration to Schomer's techniques are to use the plastic tamper built into the Moka 90 grinder (a tamper that requires an upward force on the portafilter) to compact the grind and create enough space so that about 24 grams can be held in the 3X basket. The exact amount of grind will depend upon the timing numbers that are generated with the pulled shot or pour. Once there is 24 grams or so in the 3X basket, one will immediately notice the unevenness of the puck with visible air spaces.“

  „At first I was skeptical of the pressurized filters but when I let go of my desire to produce the perfect grind, pull time and tamp pressure I found that the machine produces a good shot with nice crema with no work at all and that's fine with me. I drink cappuccino's so people that are focused on espresso alone may not be satisfied with the shots. The frother is small and insufficient for producing a really dry foam or frothing large amounts of milk. The pannarello frothing attachment is not worth the time it takes to clean it.“
