  „I have experienced the same thing.  It seems if you buy the pre-ground Illys the top of the can will actually be bulging somewhat.  When this can is opened there will be a noticable woosh of "air" out of the can because it is not a vacume but under preasure.  However, with the actual Illys beans this does not happen.“

This is significant because the finer particles are extracting at a faster pace than the larger ones, which can lend unevenness or even a slight bitter note to a cup of coffee. To reduce particle size variation (though it won't eliminate it), a "burr" style grinder is recommended.
