„I really appreciate true Italian espresso/cappuccino from the way it is prepared to the way it is consumed (in a matter of seconds). I feel that Starbucks and their ilk, while having engendered an appreciation for espresso based drinks in the USA, have added an entire layer of superfluity and nonsense to the process. Now, many others have surpassed them in the nonsense and there seems to be no end in sight!“

„I partially retract that remark. A couple years ago I had cinsistently good cappuccino's at a tiny Italian restaurant on Caye Caulker (an island off the coast of Belize South America). The owner used an old La Pavoni manual lever machine and single origin Guatemalan beans of unknown provenance (he bought them from a food wholesaler on the mainland in Belize City). It proved to me that the person running the equipment, their level of skill and passion for a good cup are huge factors (he was a native of Milan Italy).“
