CoffeeGeek - Espresso: General Discussion, Pulling perfect espresso ()

„The optimum temperature is somewhere around 92-95C or 195-203F; sour shots tell you that your brewing water is likely too cold, and bitter shots tell you that your brewing water is likely too hot. You can finesse this particular variable in your espresso ritual if you brew at the same point in the boiler cycle (e.g. time when the boiler ready light turns on, which is when the brewing water is at its hottest). Playing around with this will give you different brewing temperatures and hopefully a tastier shot.“

„The expertise of the barista and the quality of the espresso blend have all been frustrated by espresso machines that do not offer a stable brewing water temperature, until now. For me, the creation of this machine marks the beginning of caffe espresso as a culinary art.“

„We entertain a fair amount and as you probably already know; it’s simply impossible to serve espresso to a large crowd.  The CoffeeTec simply shines in this regard and I often find myself brewing 3 or 4 pots and refilling the milk container.  To date, four of our friends have been so enamored with our CoffeeTec that they purchased their own units.“

„Portafilter Sneeze: on pump and piston espresso machines that do not feature a pressure release system, removing the portafilter too soon after brewing a shot can result in the instant release of pressure in the brewhead, causing extremely hot and wet coffee grinds to spray and cause potential injury. When you complete the brewing of an espresso shot, some of the 135 PSI of pressure remains in the portafilter, and normally takes 30 seconds to a minute or longer to bleed off, allowing safe removal of the portafilter.“

„Several things are brewing though. Terry from Espresso Parts Northwest has been in touch with me lately about some new products he's going to be carrying soon, and how he wants to get some of them into my grubby little hands so I can do a detailed review on them. Heh Heh, we'll see. One note about Terry.“
