„The optimum temperature is somewhere around 92-95C or 195-203F; sour shots tell you that your brewing water is likely too cold, and bitter shots tell you that your brewing water is likely too hot. You can finesse this particular variable in your espresso ritual if you brew at the same point in the boiler cycle (e.g. time when the boiler ready light turns on, which is when the brewing water is at its hottest). Playing around with this will give you different brewing temperatures and hopefully a tastier shot.“

„We entertain a fair amount and as you probably already know; it’s simply impossible to serve espresso to a large crowd. „Portafilter Sneeze: on pump and piston espresso machines that do not feature a pressure release system, removing the portafilter too soon after brewing a shot can result in the instant release of pressure in the brewhead, causing extremely hot and wet coffee grinds to spray and cause potential injury. When you complete the brewing of an espresso shot, some of the 135 PSI of pressure remains in the portafilter, and normally takes 30 seconds to a minute or longer to bleed off, allowing safe removal of the portafilter.“
