„Most inexpensive grinders use a metal blade to chop up the beans. The blade cuts up the beans, and you control the fineness by how long you let the grinder run. Unfortunately, the resulting coffee grounds can be uneven in size, leading to inconsistant brew quality. Another downfall, is that if you are grinding finely, and therefore leaving the beans in the grinder for a longer period of time, there can be significant heat created by the blades.“

„I've been hooked on the stuff for a long time, usually either Bustelo or Pilon beans, which are unfortunately only to be found in stores whole-bean but sealed lord knows how long ago. I've tried a lot of local roasts, mostly medium espresso blends, but haven't found anything to match the kick of Cuban espresso. I grew up in Miami and moved up to New England, so I'm trying to find any good way to get that same style I had back home, but fresh.“

„So, apart from method, what else does the crema signify? Back to Ewan Reid."The crema allows us to guess at the type of bean used in the espresso blend. A blend using lots of robusta beans will have a dark brown and, although shortlived, an effervescent crema. Arabica beans will have a lighter coloured crema, with a less vigorous foam." It's precisely because of these visual cues that you can see our coffee experts staring intently at the cup of espresso, before raising it to their lips.“
