„There's also the "red wine" kenyas, with blackberry, cherry flavors, an added hint of acetone in the nose, moderate acidity, and sometimes a strong note of allspice. The roast flavors can be quite bitter with tobacco notes (think "firm tannins"); but I much prefer those that have caramel flvors down there (think "soft tannins')“

„I suspect the roasters chose this slightly darker roast style to mute or round out the powerful acidity of these coffees. The remaining four coffees were brought to a considerably darker roast, a style that many stores might call espresso or French, but which apparently represents the normal roast style for these coffees when you buy them at New York's Oren's Daily Roast or Seattle's Caravali.“

Drinking Decaffeinated Coffees Drinking Decaffeinated Coffees

„The darker roast tends to cut down on acidity while boosting the flavor. Some people don't like this because they feel it tastes too "strong." I find it coffee-perfection and am delighted that both companies offer quite a range of decaffeinated coffee beans. My current favorite at Peet's Coffees is their Aged Decaffeinated Indonesian Roast: a rich, spicy bean that has been aged for several years to develop it's flavors and exotic aromas. My favorite Starbuck's is their Decaffeinated Guatemalan Antigua: a bean which is every bit as snappy and spicy as its caffeinated relative.“

„Dark Roasts -- shiny black beans with a oily surface and a pronounced bitterness. The darker the roast, the less acidity will be found in the coffee beverage.  Dark roast coffees run from slightly dark to charred and the names are often used interchangeably which can be very confusing.  Be sure to check your beans before you buy them!“

Blending Basics Blending Basics

„This is a blend of coffees roasted to different degrees of roast, so they must be roasted individually. In particular, you may want the carbony flavors of a dark roast but also want the acidy snap of a lighter roasted Kenya or Central American coffee.“
