„The method my then girlfriend and I used to make coffee was different from Chemex's instructions. Chemex suggests a coarse to medium grind, but we used the espresso grind. I still use this grind today for all my filtered coffees. We found that more of the bean is exposed if ground fine and will drip through the paper slower for more of that deep, rich coffee flavor and kick.“

„If the cycle takes longer than six minutes, grind your coffee coarser. When using a French press, the coffee will need to be ground extremely coarse. Espresso requires an extremely fine grind...almost powder-like with a slight grittiness. The key to the proper espresso grind is the extraction time.“

„Grind is important to good coffee, but it's crucial to espresso. If you use too coarse a grind the coffee will be thin and weak; use too fine a grind and the coffee will be over-extracted and bitter (some of the water may not come through at all).
