„Enter Frothed Milk. With the long, gleaming handle going the way of the running board, the best routine left to the espresso operator is heating and frothing the milk used in drinks like cappuccino and caffè latte. Espresso is a strong, concentrated coffee, and, in accordance with European tradition, many of the drinks in espresso cuisine combine it with milk. If the milk were unheated, it would instantly cool the coffee.“

„So here are the results of a systematic tasting of 20 espresso coffees (of which I report on 12) designed by roast masters and blenders to be particularly suitable for milk-heavy espresso drinks like cappuccino and caffé latte. Although my tasting protocol for espresso has always involved tasting espresso both as a straight shot and in milk, I elaborated the milk element of the protocol for this tasting. I sampled these coffees in three stages: first as a single, straight shot (1.25-ounces including crema, 17-20 seconds after the first drop), next as a single shot mixed with one part hot (not frothed) milk, and finally as a single shot mixed with three parts hot milk.“

„Double Cappuccino. If this innovation is made correctly, you should get no more than 3 ounces of uncompromised espresso, brewed with double the usual amount of ground coffee, topped with 3 to 5 ounces of hot milk and froth, with emphasis on the froth. Usually served in an 8- to 10-ounce cup or mug. If the ground coffee is not doubled, and the operator simply forces twice as much water through one serving's worth of ground coffee, you're getting a bitter, watery perversion, rather than a taller, stronger version of a good drink.“

„I purchased this machine two years ago, after extensive research on espresso machines (which you are probably doing now, if you're reading this). I decided specifically on the vienna "superautomatica" and felt justified in when it ran strong for the first year. We're talking 2 cups a day for both my husband and myself, I drink mine with two shots and he drinks his with three, so 10 shots/day - IF we didn't have company! The machine makes great espresso, a nice crema, easy to clean, yada yada yada.“
