Coffee Storage (#)
„Storage in pergamino until right before the shipping time will help preserve the coffee. Green coffee is stored in burlap bags to allow air flow and preserves the coffee longer versus plastic or paper bags. Burlap bags should be aired on the patios before storing coffee to prevent a baggy flavor or burlap scent from being imparted to the coffee.“

„ I can't really see how it is possible a rock can make its way into the grinder. I guess a rock could tag along in those huge burlap coffee bags and then into your 1lb bag to take home...“

„The basic formula used to be beans, knickknacks and drinks. Then came ambiance, something beyond the old burlap bags - something from exotic origins, an old pot, and antique ibrik, anything would do.“

„Air is roasted coffee's worst enemy and only 9 days after roasting, coffee is stale—with just a shadow of its full flavor. And while open burlap bags of coffee sitting on the floor may look appealing, the coffee in them is not. It's stale or even rancid.“

„Once the beans reach this stage they are called parchment or pergamino beans and are stored in this form until traded. Storing raw coffee with its parchment skin retains its moisture and freshness and keeps the beans in optimal condition. Before exporting, they are milled to remove the parchment, leaving a greenish colored bean, known, not surprisingly, as green beans. It is in this form that coffee is traded.“

„This is common for commercial-grade coffees that are sold and resold by speculative buyers. But coffee can also be stored in Parchment (the outer-silverskin layer, also called Pergamino) at the farm or mill (hopefully at a temperate location at altitude) and fair quite well for 6-9 months. But only the best coffees will get such treatment!“
