„This is due in part to intrinsic compounds of coffee such as chlorogenic acid, in part to compounds formed during coffee bean roasting such as melanoidins and in part to as yet unidentified compounds. It is widely believed that antioxidants protect against the development of chronic diseases including heart disease and cancer but whether the antioxidants characteristic of coffee have such effects remains to be determined“

„In coffee, the caffeine content depends both on the type of bean and on the roasting and brewing process. Beans harvested from the "robusta" species are typically found in common name brands like Folgers and Maxwell House. As the name implies, this plant is robust; it will grow in marginal or unpredictable conditions, and this means lower production costs. Beans from the arabica plant require more pampering but produce a more full-bodied flavor.“

„After seeing a demonstration at the Bay, I bought myself a Bodum press pot and I started buying beans at the local IGA and at a local coffee bean roasting place. Drinking Bodum coffee was quite an eye opener for me - coffee could be good in the home! I quickly built up a ritual around the Bodum press pot with my friends, and the "afternoon coffee" became a daily thing to look forward to.“

„during the process of roasting coffee beans, coffeol gathers in pockets throughout the bean. This substance is forced out to the surface of the beans of darker roasts, as moisture is lost. Hence the bean has this oily appearance.“
