„Donot buy the combination stovetop units, costing as much as separates. They make you wait severalminutes after brewing coffee, before you can steam milk.“

„You cannot make espresso by brewing an espresso blend in a regular coffee maker or stovetop coffee maker. You cannot make espresso by adding hot water to instant espresso powder! Go figure.“

Selecting a Coffee Brewing Method Selecting a Coffee Brewing Method

„The nice added feature of most of these counter top machines is that you can make steamed milk for cappuccino and latte. Stovetop models have two chambers like the Neapolitan flip method but the chamber on the bottom forces hot water through a filter that holds your coffee grounds into the upper serving chamber. No flipping of the device is done.“

„“Many of the equipment companies that we’ve been working with have simple coffee brewing machines that are very inexpensive,” he says. “Some of them are under $200, where you can use the stainless steel carafe; you pull the basket out of the unit and the carafe fits right in there with our infuser and it brews right into the carafe. So for around $200, you’ve got an automatic tea brewing system. That’s the best, it’s really cool.“

„If you've only been drinking Toddy coffee you're limiting yourself. Each brewing process creates a different result, just as each coffee has its own unique characteristics. I suspect that your dinner guests rave about it because they've not had properly prepared and served coffee, so they don't know any better. Toddy coffee does produce a consistent, easy to consume product.“

„It is supposed to be set to "Full Drip" when you brew a full pot, "Slow Drip" (half open) for brewing less than a full pot, and No Drip (closed) to pull out the pot when coffee is still brewing. However, it has a fantastic alternative function; I set it to No Drip for the first 1-2 minutes of the brew cycle to allow for the hot water and grinds to fully infuse, then I switch it to Slow Drip for the remainder of the brew cycle (I see no need to use Full Drip at all). The intensity of the coffee is excellent using this technique, and no longer is the timing of the water passing through the coffee dependent on the grind; too coarse and the brew tastes week and under-infused, too fine and it is bitter and has sediment). This improves the performance of Swiss Gold filters in the Technivorm too, and we currently use one here at the shop with great results.“
