Coffee Cupping (#)
„It is important to aspirate strongly since you are trying to cover the entire tongue evenly. Aspirating strongly will also causes tiny droplet of coffee to be distributed into the throat and into the nasal passage where the nose can act as another powerful tasting tool. Most of the flavor observed in a coffee is a result of aromatic compounds present in the coffee. This effect can be demonstrated by plugging your nose while drinking coffee.“

„Next, taste the tea. To get the fullest flavor, we recommend you slurp it, taking the liquid into your mouth so that it spreads evenly over the entire surface of your tongue and reaches all of your taste buds at once. Don't be afraid to make a loud noise.“

„I gotta get to northern Mexico for a Bourbon that is fruity to the point of ferment, out mocha'ing the real mocha. In between cupping, I kinda help hefting the bags of parchment off the drying patio because of the damp overnight. I buy the tree-ripened, sun-dried naturals.“

„I'd like for us to return to cupping for a moment. Before, I mentioned how it is important for the production roaster to take part in the cuppings that decide which coffees will be purchased, and how they will be roasted. I would imagine that this is already fairly common practice. One more thing I want to stress along those same lines is the continued cupping of coffees well after you have initially decided on their roast levels.“

„It is a universal means of evaluating coffee, universal because, everyone from the farmers to the baristi tastes coffee by means of cupping. Most roasters and green coffee buyers use this more or less as a tool to control consistency in their product, a somewhat dry definition. I have yet to meet a roaster or coffee buyer who describes it in such bland terms. The rapid slurp from a cupping spoon, allowing the aromatics of the coffee to spread over your tongue by means of oxygen and moisture, gives you a picture of how this coffee has developed.“
