„Brown's Food Services are run by a small company called "University Food Services" (UFS) rather than by a large company such as Aramark. Currently most snack bars and smaller "coffee carts" on campus serve only Fair Trade coffee, but the coffee served in the two dining halls and one snack bar that's attached to a dining hall is NOT Fair Trade; the coffee served by the catering on campus is not Fair Trade either. Because we have been in contact with UFS in creating the Hourglass Cafe (which actually operates under the food license of UFS), we decided against petitioning and instead opted simply to meet with them to express our concerns. Prior to the meeting, we did tons of research on different Fair Trade providers and brought in prices and other information.“

„Hardly a car was seen on the road that passed my bungalow, but a daily bus plied to Belur and then in 1936, came the first lorry to lift the coffee to Mangalore for curing by Peirce Leslie and dispatch to London for sale. Prior to the arrival of the lorry and even then for three or more years thereafter, the coffee was sent by bullock carts down the Shiradi Ghaut. I remember now the jangling of the bells on the bullocks as the 20 or so carts arrived from the Hassan area one evening and the talk and camp fires of the Gowda drivers in the field outside the bungalow and drying-ground as they assembled for the 6 day journey. The carts' canopy covered in straw for the journey down the ghaut at night, with a hurricane lamp hanging from their axles.“

„Dr. Gerry Tesch, president of Gerry’s Coffee Carts in San Diego, believes that the owners of cart and kiosk businesses “want to be their own boss. They no longer want to work for somebody else and they want to decide when and how long they work.” These individuals are also very aware of the fact that within this industry, it is possible to own a business for as little as $5,000 to $15,000 for a cart and $15,000 to $30,000 for a kiosk and, if successful, make sales close to $700 a day. Robert Kronrad, senior vice president of All Star Carts & Vehicles, stated that it is not rare for a kiosk situated in a more transitory location, such as a mall or airport, to bring in anywhere from $800-$1,500 a day in revenues.“
