Coffee Brewing (#)
„General rules: The following general rules apply to each brewing method discussed. Coffee should be brewed for 4.5-5 minutes using a ratio of 55 grams of ground coffee per liter of filtered water (195-205°F). It is convenient to use 2 tablespoons of coffee per 6 ounces of filtered water. Filtered water and spring water are recommended.“

„Pour it into a warmed mug or coffee cup so that it will maintain its temperature as long as possible. Brewed coffee begins to lose its optimal taste moments after brewing so only brew as much coffee as will be consumed immediately. If it will be a few minutes before it will be served, the temperature should be maintained at 180 - 185 degrees Fahrenheit. It should never be left on an electric burner for longer than 15 minutes because it will begin to develop a burned taste.“

„If you've only been drinking Toddy coffee you're limiting yourself. Each brewing process creates a different result, just as each coffee has its own unique characteristics. I suspect that your dinner guests rave about it because they've not had properly prepared and served coffee, so they don't know any better. Toddy coffee does produce a consistent, easy to consume product.“

„I had the head technical troubleshooter at Saeco USA once tell me that coffee is "supposed to be brewed at 165F" when he was contacted about complaints that the Saeco Latte was brewing too cold. And once, I wrote Braun enquiring why their machines never seem to produce temperatures hotter than 180F at the showerhead (in the carafe, the coffee is closer to 175F), and they told me that their extensive scientific study has "proven" that 175F to 180F is the optimum brewing temperatures.“
